This cocktail is our love letter to a Christmas in Canberra, ripe cherries, juicy berries, and a gentle nod to native botanicals. It’s bright, fruity, and beautifully refreshing, with just enough depth to feel special without being complicated.
The hero is our Ad Crescendum var Infusionem Native Gin, paired with berry liqueur, cherry juice, and a fragrant strawberry gum tea. Strawberry gum is a beautiful native ingredient with soft berry and eucalyptus notes; not always easy to find, but don’t worry, a fruit herbal tea or berry tea works just as deliciously and keeps this drink very much in the festive spirit.
And cherries? In season, abundant, and utterly Christmas. This cocktail was made for them. You can certainly juice your own when you have so many!
45ml Underground Ad Crescendum var Infusionem Native Gin
20ml berry liqueur (there are so many wonderful options, each brings its own fruity personality, so feel free to play)
40ml strawberry gum tea (or substitute with a berry or fruit herbal tea)
60ml cherry juice
A splash of fresh lime juice
Add all ingredients to a mixing glass. Fill generously with ice and stir for around 20 seconds to gently chill and dilute the cocktail to silky perfection.
Strain into a highball glass filled with fresh ice.
Garnish with a pair of fresh cherries on top 🍒
